Local resident Joshua Henry continues to advance in his pursuit to become “Canada’s Greatest Explorer.”
In the latest episode, which is available to view online at WoodsExplorer.ca, Henry and the five other competitors, had to create an outdoor meal using camping supplies and other provided ingredients.
“I was not expecting a cooking challenge,” Henry conceded in the episode. “But camping and cooking goes hand-in-hand.
“Yeah, I’m excited,” he enthused.
The competitors were provided various supplies such as dry goods, along with fresh rainbow trout and foraged ingredients.
Canadian chef Nancy Hinton was on hand to judge the dishes based on taste, originality, creativity, and use of the foraged items.
“I’m hoping that the explorers take full advantage of the fresh fish and wild greens,” Hinton noted.
“I’m curious to see how many risks they take,” she added.
Henry’s background as a world traveller appeared to give him an edge once the competition began.
“Being a traveller, I get to go all over the world and try different cuisines,” he noted.
“So I’m a big ‘foodie.’
“I do like to try different ingredients from different regions of the world,” Henry added.
“When it comes to cooking, I’m really just an experimenter.”
While preparing his dish, Henry wrapped the fish in tinfoil in hopes of emulating a preferred cooking technique.
“I like to cook fish when I’m camping in coal like this, too,” he explained.
“I find a lot of times the fish will cook slowly, and I’m hoping the stove is going to act like that.”
Henry’s completed plate featured trout with a honey-and-mustard glaze.
“I’ve taken those fiddleheads and put butter, some herbs, and that in tin foil, [and] cooked it right over the stove,” Henry told Hinton and show host Ricky Forbes.
“Fish is good, a tad overdone,” Hinton said after taking a bite.
“Better that than underdone.
“I’m going to have a hard time deciding, I think,” she admitted.
For his efforts, Henry placed third and will be among the final four competitors moving forward in the next episode.
The air date of that episode has yet to be announced.
